Let veggies take center stage on your plate, protein is an excellent sideshow! I think one of the things that is a good lesson to learn from this is how to recalibrate the portions on your dinner plate. As Americans, we think traditionally of the meat as the main character and build sides to go with it. But maybe we should be thinking of it differently, by making the kale king, we start to slide the pie chart in a different direction.
